Please be reminded that I am not a cook or a trained chef nor a food historian I just want to recommend some Cebuano (Cebu Province in particular) food/cuisine that you must try.
Lechon – a whole roasted pig stuffed with seasonings and slowly cooked over charcoal. Lechon Cebu is considered the best in the world even Anthony Bourdain agrees

SUTUKIL (sounds like ‘shoot to kill’) is short for SUgba (grilled), Tula’ (stew) and KILaw (cooked in vinegar w/o the use of heat). In the recent years the Mactan Shrine area has been popular to local and foreign tourist due to the presence of SUTUKIL restaurants and it’s proximity to Mactan Airport but for less expensive SUTUKIL dining experience, go to Cebu City; it’s all over the place.
Dried Mango- ripe, sun dried mangoes good for snacks and desserts the best tasting dried mangoes in the country, if not the world.
Otap is an oval shaped puffed pastry made of flour, sugar, shortening and coconut sprinkled with sugar. Remember to have a drink nearby when you try our otap.
Carcar Chicharon – delicious delicacy of pork rind, the skin of the pork after it has been seasoned, dried and deep fried. It is best eaten with vinegar. The town of Carcar had long been the famous since 1900s in Cebu Province for their chicharon.
Danggit - salted dried fish that is best paired with hot rice (or puso- rice wrapped and cooked in coconut leaves shaped like a diamond ) and dipped in vinegar. Others prefer a mixture of vinegar and crushed chili peppers with a dash of salt.
