Maximo’s Famous Fried Chicken There are various styles of cooking chicken. Roasted, grilled, barbeque, curry, stuffed, steamed, stir-fried etc. Possibilities are endless but we would always go back to the basic and have our chicken fried. Everybody loves fried chicken whether you are child or an adult I even know diet freaks cheating on having fried chicken for meals.
Many restaurants and fast food chains in the country has their own versions of fried chicken wherein mostly are breaded. If you will ask me of what is my favorite fried chicken my answer is Max’s. Their fried chicken is has no breading yet the skin is crispy, the meat inside is tender, and the taste is superb. Many tried to copy, even over the internet you’ll see recipes claiming that it is the secret ingredient of Max’s, nevertheless their imitations are futile.
I have seen on television Max’s humble beginning. It all begun after World War II in the year 1945. Maximo Gimenez served his American friends fried chicken at his home. These friends of his kept on coming back and later insisted to pay Maximo for the food and drinks. His friends also invited other GI’s at Maximo’s place thus he started to put more tables and chairs in his home and later it became a small café. Its popularity has reached others too, the Filipinos. His customer base grew until his humble café became a restaurant to serve more patrons. Now Max’s popularity has gone wider. They have branches all over the Philippines. Their expansion is truly a testimonial of their slogan “the house that fried chicken built”.
Max’s is one of the restaurants I choose whenever I have friends from other countries who would like to try Filipino food. Because aside from the famous fried chicken they also serve other Filipino favorites like sinigang, kare-kare, lumpiang sariwa, pancit, halo-halo and buko pandan. My relatives from US and Europe whenever they head back here in Philippines would always ask me to set a reunion at Max’s and a feast on fried chicken.
